Assembly lube might be the most critical lubricant your engine ever sees.

Using plain engine oil can work, but oil can migrate from installed parts during a rebuild, which might span days or weeks. Why risk it when assembling an engine? Dry starts are the largest cause of wear on engine parts. When cranking an engine with new internals, the oil pump takes a little time to prime and begin the task of lubricating. (Pop a line off a rocker box and see how long it takes to show up at the box—it's an uncomfortably long period.)
Engine assembly lube coats those parts and stays in place until engine oil replaces it and washes it away, protecting the new parts you're lovingly installing in your mill.
